Ingredients

2 cups cooked Adzuki beans

½ cup sprouted Mung beans

1 big bunch fresh parsley, roughly chopped

½ lemon, juice only

1 small onion, finely diced

2 tsp extra virgin olive oil

A pinch sea salt

Freshly ground black pepper

 


Instructions

Add all the ingredients in a medium bowl, season with salt and pepper, mix to combine and set aside for 10 minutes to allow the flavors to combine before serving.
