2 small sweet potatoes
2 tsp raw tahini
½ small bunch fresh parsley
Handful red onion sprouts
A pinch sea salt
A pinch cayenne pepper
Preheat the oven to 175°C/347°F.
Line a baking sheet with parchment paper and the sweet potatoes.
Roast for 20 minutes, until tender.
Remove from the oven, cut lengthwise, tear apart the edges, season the inside with salt and pepper, add the sprouts, drizzle tahini and serve.
