1 small cauliflower head, cut into medium florets
1 handful mint leaves, roughly chopped
½ lime, juice only
1 tsp ground cumin
1 tsp coconut oil
A pinch sea salt
A pinch cayenne pepper
Preheat the oven to 175°C/347°F.
Line a baking sheet with parchment paper and add the cauliflower florets.
Drizzle with coconut oil, add salt, cumin and cayenne pepper and toss to coat evenly.
Bake for 20 minutes, until golden.
Serve garnished with chopped mint leaves and drizzled with lime juice.
