These raw spring rolls are virtually pulsing with energy and have the advantage that you can play with the ingredients any way you like, even choosing seasonal veggies. Our version is made with antioxidant and fiber-rich vegetables, scrumptiously flavored with fresh coriander, ginger, and lime. 1 cup finely chopped red cabbage
1 carrot, cut into think stripes
1 green onion, finely diced
5-6 fresh coriander leaves, roughly chopped
1 tbsp raw tamari sauce
1 inch ginger piece, peeled and minced
½ lime, juice only
Soaked spring rolls rice sheets, to assemble
Add the carrot, cabbage, ginger, lime juice and tamari sauce into a medium bowl, toss to combine and set aside to marinate for 10 minutes.
Evenly distribute the vegetables onto the rice sheets, top with fresh coriander leaves and diced green onion, then roll the rice sheets.
Serve as they are.
