Vegan Pumpkin Soup With Ginger

Ingredients

1 1/2 cup roasted pumpkin

1 tbsp coconut milk

2 cups low sodium vegetable broth, warm

1 inch ginger piece, peeled

2 garlic cloves, crushed

Freshly ground black pepper

A pinch sea salt

Fresh oregano leaves, to garnish

 


Instructions

Add all the ingredients into the blender and process to obtain a creamy soup.

Serve warm, garnished with fresh oregano leaves.
