2 small russet potatoes

1 ripe avocado, peeled and cut into thin slices

1 small bunch fresh parsley, roughly chopped

1 tsp coconut oil

1 tsp extra virgin olive oil

1 tbsp fresh lemon juice

1 tbsp sesame seeds

1 garlic clove, minced

2 tsp raw tahini

A pinch sea salt

Freshly ground black pepper



Preheat the oven to 218°C/425°F.

Cut the potatoes into halves, scrub them, drizzle with coconut oil and rub to coat evenly, then bake for 35-40 minutes, until tender.

In a small bowl combine chopped parsley, lemon juice, olive oil, sesame seeds, garlic, salt and pepper, and mix to combine.

Remove the potato skins from the oven, top with avocado slices and parsley salad, drizzle with tahini and serve.
