4 medium parsley roots, peeled and cut into thin stripes
2 tsp coconut oil
A pinch sea salt
Freshly ground black pepper
2 tsp raw tahini
1 tbsp fresh lemon juice
1 tsp raw agave nectar
½ inch ginger piece, peeled and minced
Preheat the oven to 175°C/347°F.
Line a baking sheet with parchment paper and add the parsnip stripes.
Drizzle with coconut oil, season with salt and pepper, toss to combine and bake for 10-15 minutes until golden.
In a small bowl mix the raw tahini with lemon juice, agave nectar and ginger, to obtain a smooth dressing.
Serve it with the baked fries.
