2 cups broccoli florets
1 tsp coconut oil
½ cup almonds
2 tsp nutritional yeast
1 tsp apple cider vinegar
2 garlic cloves, minced
A pinch sea salt
Preheat the oven to 175°C/347°F.
Line a baking sheet with parchment paper and add the broccoli florets.
Bake for 15 minutes, then remove from the oven.
While the broccoli is roasting, prepare the raw parmesan.
Add the almonds into the food processor and pulse to obtain a fine grind.
Add the garlic cloves, apple cider vinegar, coconut oil, nutritional yeast and salt, and pulse to incorporate.
Transfer the roasted broccoli into a bowl, top with the raw parmesan and toss to coat evenly.
Set aside to cool, then serve.
