1/2 cup buckwheat flour
½ cup almond flour
1 tbsp ground flax
2 tsp psyllium husks
2 tbsp vegan milk
1 tsp extra virgin olive oil
1 garlic clove, minced
10 fresh aromatic herb leaves (any available basil, mint, oregano rosemary), roughly chopped
A pinch sea salt
Preheat the oven to 175°C/347°F.
Line a baking sheet with parchment paper.
In a food processor add the flours, ground flax and psyllium husks and pulse to combine.
Add the vegan milk, olive oil, garlic, salt and chopped herbs, and process to obtain a dough.
Roll the dough into a very thin layer onto a well floured surface, then transfer onto the baking sheet.
Cut into the desired shape, then bake for 15-20 minutes, until golden.
