Vegan Guacamole Dip

Everybody knows about guacamole, but few really know its amazing benefits for the overall health of your body. Avocado is not only a creamy and versatile food, but it’s one of the most nourishing ones, especially because of the vitamins E and K, healthy monounsaturated fats, magnesium, potassium and fiber, all present in high doses. This guacamole dip gives you a concentrated dose of all of these, plus calcium and protein from the seeds, along with antioxidants and vitamin C from parsley. It’s best consumed on gluten-free whole toast, to increase the quantity of dietary fiber and keep you satiated until dinner.

Vegan Guacamole Dip

Ingredients

1 ripe avocado, peeled and cut into chunks

3-4 cherry tomatoes, cut into small cubes

½ lime, juice only

1 tbsp mixed seeds 

Handful fresh parsley leaves, finely chopped

½ small red onion, finely diced

A pinch sea salt

A pinch cayenne pepper

 


Instructions

Add all the ingredients into the food processor and mix to obtain a chunky puree.

Serve on gluten-free toast, garnished with fresh parsley.
