2 medium sweet potatoes, rinsed well and cut into wedges shape
2 green onion springs, finely chopped
1 inch ginger piece, peeled and minced
2 tsp coconut oil
A pinch sea salt
Freshly ground black pepper
Preheat the oven to 175°C/347°F.
Line a baking sheet with parchment paper and add the sweet potatoes.
Season with salt and pepper, drizzle with coconut oil and toss to coat evenly.
Roast for 20 minutes, then remove from the oven.
While the wedges are still hot, add the minced ginger and toss to combine.
