Vegan Cold Tomato Soup With Indian Spices

2 ripe tomatoes, roughly chopped

1 carrot, finely diced

1 lemon, juice only

1 small onion, finely diced

1 garlic clove, crushed

1 tsp ground turmeric

1 inch ginger piece, peeled

1 tsp ground cumin

1 tbsp raw tahini

A pinch sea salt

Freshly ground black pepper

Fresh oregano leaves, to garnish



Blend all the ingredients to obtain a creamy soup, then serve cold, garnished with fresh oregano leaves.
