Vegan Coconut Energy Bites

Simple, with a discrete flavor, creamy texture, and delicious taste, these energy bites are the perfect snack for a long afternoon, when all you need is an energy boost. Almonds are a great source of magnesium and manganese, which trigger the detox process, and also a good source of quality protein. Coconut oil not only gives a heavenly flavor to these snacks, but also has antibacterial properties, lowers cholesterol, and helps your body cleanse itself on the inside.

Vegan Coconut Energy Bites


Ingredients

1 tbsp almond butter

2 tsp coconut oil

½ cup cashews

½ cup sunflower seeds

½ cup rolled oats

1 tbsp raw agave syrup

A pinch sea salt

¼ cup unsweetened desiccated coconut flakes, to garnish

 


Instructions

Add the cashews, sunflower seeds and oats into the food processor, and pulse to obtain a fine grind.

Add the almond butter, coconut oil, agave syrup and salt, and pulse to incorporate.

Add coconut flakes onto a plate, then shape the mixture into little bites and roll them over the plate to coat in coconut flakes.

Refrigerate for at least 20 minutes, then serve.
