Vegan Chilled Kale Soup

Kale contains high amounts of glucosinolate, involved in the first phase of detoxification, along with minerals, vitamins, fiber, and essential fatty acids. Add in avocado to obtain a creamy texture and a nourishing afternoon snack.

Vegan Chilled Kale Soup

1 cup fresh kale leaves, roughly chopped

1 garlic clove, crushed

1 small zucchini

1 celery stalk

1 ripe avocado, peeled and cut into halves

2 tsp raw tamari

2 tbsp fresh lemon juice

1 tsp raw tahini

½ piece ginger, peeled and minced

A pinch sea salt

Freshly ground black pepper

1&1/2 cup water

White and black sesame seeds, to garnish



Add all the ingredients into the blender and process to obtain a creamy soup. Set aside for 10 minutes to allow the flavors to combine.

Distribute into the serving bowls, garnish with sesame seeds and serve.
