Vegan Cauliflower Sushi Rolls

This exquisite snack has a luxurious appearance and won’t take you more than 10 minutes to prepare. It is also loaded with nourishing and detoxifying nutrients to support your body’s cleansing activity. Cauliflower is a fantastic replacement for rice, not only because of its subtle flavor, but especially for its detoxifying properties, with antioxidants involved in both phases of a natural detoxification. The nori sheets are a great source of chlorophyll for helping your cells to produce energy and oxygenating them. The whole combination tastes delicious, is low-calorie, and has high detoxifying value.

Vegan Cauliflower Sushi Rolls

½ medium cauliflower head, cut into florets

1 tsp apple cider vinegar

1 carrot, cut into thin stripes

1 small bunch parsley

½ avocado, peeled and cut into thin slices

2 nori sheets

1 tbsp raw tamari



Add the cauliflower into the food processor and pulse to obtain a rice like texture.

Bring water to boil into a medium sauce pan, add the cauliflower and simmer for five minutes.

Remove and drain very well, then transfer into a bowl.

Add the apple cider vinegar and mix to combine.

Spread half of the cauliflower quantity onto a nori sheet, leaving a 1/2-inch border on the bottom and top.

Place half of the carrot, parsley and avocado filling in an horizontal line 3 inches above the bottom edge of nori.

Roll the sushi sheet, firmly compressing.

Use a sharp knife to cut the roll in equal slices.

Repeat the same with the other nori sheet, then serve with tamari.
