Vegan Avocado Filled With Parsley Salad

This is a very simple snack, yet very nourishing and loaded with detoxifying ingredients. It is a good pairing for foods rich in antioxidants, because healthy fats increase the absorption of these phytonutriens. Parsley might not be a very popular herb, but it’s actually a fantastic source of vitamins, minerals, protein and other nutrients providing antioxidant and anti-inflammatory protection to your cells. Combine them to create a highly detoxifying snack, and add mixed seeds and nuts for extra minerals and essential fatty acids, plus a crunchy texture.

Vegan Avocado Filled With Parsley Salad

2 ripe avocado, stone removed, cut into halves

1 bunch fresh parsley, finely chopped

2 tbsp mixed seeds (pumpkin, sunflower, flax, pine nuts, chia, black and white sesame)

2 tsp extra virgin olive oil

A pinch sea salt

1 tsp sumac 

Freshly ground black pepper

1 tbsp fresh lemon juice



In a medium bowl add the parsley, sumac and seeds, drizzle with olive oil and lemon juice and mix to combine. 

Season with salt and pepper, then distribute evenly on top of the avocado halves and serve.
