Mediterranean Toast (Hummus, Tomato, Aromatic Herbs)

For the hummus:

1 cup cooked garbanzo beans (chickpeas)

1 tbsp raw tahini

½ lemon, juice only

1 garlic clove, crushed

½ tsp ground cumin

A pinch sea salt


For the sandwich:

1 ripe tomato, cut into slices

1 handful fresh aromatic herbs leaves (basil, oregano, mint)

Freshly ground black pepper

1 tsp extra virgin olive oil

2 gluten-free toasts


  1. Add all the ingredients for the hummus in the food processor and pulse to obtain a fine puree. Add more lemon to obtain the desired consistency.
  2. Spread one tablespoon hummus on each toast, top with tomato slices, season with black pepper and drizzle a little bit of olive oil for extra flavor, then serve.
